Steel makes certain sounds when it comes into contact with glass, brick, ash, etc. which resonates through the probe and out the tubular handle. I'd guess fiberglass would not make those same sounds. Also fiberglass could snap, splinter or break , especially after multiple uses weakening it. Maybe in soft soils or sandy soils the breakage issue wouldn't be too bad. It doesn't sound like a good alternative to me, besides, steel probes are cheap to make yourself . You can try a welding shop if premade ones seem like too much money to spend.
